Ingredients:
- 2 cups cooked quinoa
- 1 cup tomatoes, chopped
- 1 cup cucumbers, chopped
- 1 cup parsley, chopped
- 2 Tb. fresh mint, chopped
- 2 Tb. olive oil
- 2 Tb. lemon juice
- Salt and pepper to taste (chili salt if you can find it)

Add quinoa, tomatoes, cucumbers and fresh herbs into a large bowl. -

In a separate bowl, whisk together oil, lemon juice, salt and pepper. Pour dressing over salad ingredients and toss to combine. -

Serve immediately and enjoy!
Pro tip: Add in your favorite proteins (chickpeas, chicken, steak, shrimp, etc.) for a heartier twist!
