Ingredients:

  • 2 cups cooked quinoa
  • 1 cup tomatoes, chopped
  • 1 cup cucumbers, chopped
  • 1 cup parsley, chopped
  • 2 Tb. fresh mint, chopped
  • 2 Tb. olive oil
  • 2 Tb. lemon juice
  • Salt and pepper to taste (chili salt if you can find it)

Directions:

    Add quinoa, tomatoes, cucumbers and fresh herbs into a large bowl.

    In a separate bowl, whisk together oil, lemon juice, salt and pepper. Pour dressing over salad ingredients and toss to combine.

    Serve immediately and enjoy!

Pro tip: Add in your favorite proteins (chickpeas, chicken, steak, shrimp, etc.) for a heartier twist!
