For many of us, pie is out of the question to make at home, but this sweet lemon meringue recipe makes it easy for you to hand-craft a pie in your own kitchen!

Ingredients:

Filling:

  • 1 cup white sugar
  • 2 Tb. all-purpose flour
  • 3 Tb. cornstarch
  • ¼ tsp. salt 
  • 1½ cups water
  • 2 lemons, juiced and zested
  • 2 Tb. butter
  • 4 egg yolks, beaten
  • 1, 9″ pie crust, baked

Meringue:

  • 4 egg whites
  • ½ cup white sugar

    Preheat your oven to 325°F.

    Whisk sugar, flour, cornstarch and salt together in a medium saucepan. Stir in water, lemon juice and lemon zest. Once thoroughly combined, cook over medium-high heat until mixture comes to a boil. Stir frequently. Then add butter and stir to melt and combine.

    In a small bowl, whisk egg yolks with ½ cup of the hot sugar mixture. Whisk each mixture together and bring to a boil. Continue to let it cook while stirring constantly until mixture is thick. When ready, pour mixture into the baked pie crust and set aside.

    Beat the egg whites in a bowl until they get foamy. Continue to beat while adding sugar until stiff peaks begin to form. Once thickened enough, spread the mixture over top of the pie filling and seal the edges at the crust.

    Bake for about 20 to 25 minutes or until the peaks of the meringue are golden brown.
