This simple chicken recipe adds a sweet flavor to baked chicken that can’t be beaten! Perfect for scratching that BBQ itch on a rainy day.

Serves: 4

Ingredients:

  • 4 boneless skinless chicken breasts or thighs
  • 2 cups pineapple chunks (fresh is recommended, but frozen or canned will work!)
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • Coarse salt and cracked black pepper, to taste

Sauce

  • ½ cup preferred BBQ sauce
  • 3 clove garlic, minced (or 2 tsp. dried garlic)
  • 1½ tsp. smoked paprika
  • 2 Tb. olive oil
  • 1 jalapeño, sliced
  • 2 Tb. fresh lemon juice
  • 1 tsp. dried oregano
  • Chopped cilantro, to taste

Directions:

    Preheat oven to 350°F. Lay out four 12x12-inch squares of aluminum foil and place pineapple chunks and bell pepper in the middle of each. Add preferred seasoning, place a piece of chicken on top of each and continue to season.

    Mix BBQ sauce, olive oil, paprika, minced garlic, lemon juice, oregano, cilantro and jalapeño in a separate bowl. Distribute and pour sauce evenly over each packet.

    Roll and fold the foil over on each pack until each is sealed, and move the packs to a baking sheet. Bake for 35 to 40 minutes. Be sure that the chicken gets cooked through.

    Once the chicken is cooked, open the packs to drizzle with more sauce and let broil for a couple minutes to crisp the chicken.

    Garnish with cilantro, and serve immediately!
