Garlic and avocado and cheese… oh my! Enjoy this twist on the classic grilled cheese sandwich, and pair it with a salad for a healthy lunch or dinner.

Serves: 1

Ingredients:

  • 1 avocado
  • 2 slices of bread
  • ½ tsp. crushed red pepper
  • 1 garlic clove, minced
  • ½ cup mozzarella cheese
  • 1 Tb. olive oil

Directions:

    Mash the avocado in a small bowl then add in the garlic and crushed red pepper.

    Spread the avocado mixture on both slices of bread. On one slice, add mozzarella cheese then place both pieces of bread together.

    Toast in a pan with olive oil, flipping once carefully until golden brown on both sides.

    Place sandwich on cutting board and slice to preference. Enjoy while warm for gooey mozzarella greatness!
