Homemade Oatmeal Cream Pies

Yields 18

Ingredients:

  • ¾ cup butter, softened
  • 2 large eggs
  • 1 box spice cake mix
  • 1 cup quick-cooking oats
  • 16 oz. vanilla frosting

Directions:

    Beat butter and eggs until blended, then add in cake mix and oats.
  • 2

    Refrigerate for 2 hours or until firm enough to roll.
  • 3

    Preheat oven to 350°F and line a baking sheet with parchment paper.

    On a well-floured surface, roll half of the dough to ¼-inch thickness. Cut with a floured 2 ½-inch round cookie cutter. Place 1 inch apart on the baking sheet.

    Bake for 8 to 10 minutes. Remove the cookies from the pans to wire racks and let them cool completely.
  • 6

    Spread frosting on the bottoms of half of the cookies then cover with the remaining cookies.
