Salsa Verde Baked Eggs

Looking to switch up your breakfast routine or add a bit of spice to your easy dinner line-up? Serve these baked eggs with toast or tortillas any time of the day.

Serves 2

Ingredients:

  • 1 cup salsa verde
  • 2-4 eggs
  • Salt
  • Pepper
  • Cotija cheese
  • Cilantro
  • Radishes, thinly sliced, optional
  • Lime wedges, optional
  • Warm tortillas or toasted bread

Directions:

    Heat the oven to 400°F. Spray a 10-inch oven-safe skillet with cooking spray.
  • 2

    Pour the salsa verde into the bottom of the pan.
  • 3

    Gently crack eggs on top of the salsa and season with salt and pepper.
  • 4

    Place the skillet into the oven and bake for 12 to 15 minutes or until the egg whites are cooked but the yolks are still runny.
  • 5

    Remove from the oven and top them with Cotija cheese, cilantro and radishes.
  • 6

    Serve immediately with tortillas or toast.
