Zucchini Fries

Prep time: 20 minutes
Cook time: 20 minutes
Serves 4

Ingredients:

  • 2 medium zucchinis
  • 1 cup panko breadcrumbs
  • ½ cup Parmesan cheese, grated
  • 1 Tb. garlic powder
  • 1 Tb. basil
  • 1 tsp. kosher salt
  • 1 tsp. ground black pepper
  • 2 medium eggs

Directions:

  • 1

    Preheat the oven to 425° and line a baking sheet with parchment paper.
  • 2

    Cut zucchini into pieces 4 inches long and 1 inch wide.
  • 3

    In a large bowl, combine panko breadcrumbs, Parmesan, garlic powder, basil, salt and pepper.

    In a shallow bowl, whisk together eggs and dip in the zucchini, coating evenly.
  • 5

    Toss coated pieces in breadcrumb mixture.
  • 6

    Place fries in a single layer and bake for 15 to 20 minutes, flipping halfway through.

Carrot Fries

Cook time: 25
Serves 4

Ingredients:

  • 4 large carrots
  • 4 Tb. olive oil
  • 2 Tb. fresh or dried parsley
  • 2 tsp. paprika
  • 2 tsp. kosher salt
  • 2 tsp. ground black pepper

Directions:

  • 1

    Preheat the oven to 425° and line a baking sheet with parchment paper.

    Cut carrots into pieces 4 inches long and ½ inch wide.

    In a large bowl, toss carrots with olive oil, parsley, paprika, salt and pepper.

    Place fries in a single layer and bake for 20 to 25 minutes, flipping halfway through.

Asparagus Fries

Cook time: 20
Serves 4

Ingredients:

  • 2 bundles of asparagus
  • 2 cups almond, finely crushed
  • ⅔ cup Parmesan cheese, grated
  • 2 Tb. garlic powder
  • 4 Tb. dried oregano
  • 2 tsp. kosher salt
  • 2 tsp. ground black pepper
  • 2 medium eggs

Directions:

  • 1

    Preheat the oven to 425° and line a baking sheet with parchment paper.
  • 2

    Cut off 1 to 2 inches of asparagus ends and discard.
  • 3

    In a large bowl, combine crushed almonds, Parmesan, garlic powder, oregano, salt and pepper.

    In a shallow bowl, whisk together eggs and dip the asparagus, coating evenly.
  • 5

    Toss coated pieces in almond mixture.
  • 6

    Place fries in a single layer and bake for 15 to 20 minutes, flipping halfway through.
